Ingredients:
- 1 tbsp vegan butter or olive oil
- 2 garlic cloves, minced
- 1/4 tsp chili flakes
- 3/4 cup tomato puree
- 1 tsp dried basil
- 1/2 cup Harris & Ruddock Original Cream Cheese Spread
- 1/4-1/2 cup reserved pasta water
- Pinch of salt and pepper, to taste
Instructions:
- While pasta is cooking in a large pot of boiling salted water, scoop out 1/2 cup of pasta water and set aside.
- In a large skillet, melt the vegan butter or heat the olive oil over medium heat. Add minced garlic and chili flakes, and cook gently for about 2 minutes.
- Add tomato puree and dried basil to the skillet. Stir well, reduce the heat, and let it simmer for 5 minutes.
- Stir in the Original Cream Cheese Spread along with 1/4 cup of the reserved pasta water. Mix until the sauce is smooth and creamy, adding more pasta water if needed. Season with a pinch of salt and pepper to taste.
- Add your ravioli to the skillet and toss gently to coat. Serve immediately and enjoy!
