These Golden Pistachio Thumbprint Cookies are a delectable treat to enjoy with a cup of tea or as an after-dinner dessert. Ingredients:
- 2 cups all-purpose flour
- 1/2 tsp salt
- 3/4 cup vegan butter, slightly softened
- 1/2 cup organic granulated cane sugar
- 2 tbsp Harris & Ruddock Almond Milk, or any plant-based milk
- 1 tsp vanilla extract
- 1/3 cup Harris & Ruddock Golden Pistachio Dessert Spread
Instructions:
- Preheat oven to 350°. Line a baking sheet with parchment paper and set it aside.
- In a medium bowl, whisk together the flour and salt until well combined.
- In the bowl of a stand mixer fitted with a paddle attachment, beat the softened vegan butter on medium speed until creamy, about 30 seconds.
- Add the sugar to the butter and beat on medium speed until incorporated, about 30-60 seconds. Scrape down the sides of the bowl as needed. Then, add the vanilla extract and mix on medium speed until combined, about 30 seconds.
- Return the mixer speed to low and gradually add the flour mixture. Mix until just combined and dough starts to form, about 30-60 seconds. Scrape down the sides of the bowl as needed. Then, add the almond milk and mix on low to combine.
- Using a small cookie dough scoop, scoop the dough and roll into smooth balls. Place the dough balls on your prepared baking sheet about 1 1/2 inches apart.
- Using the back of a 1/4 tsp, make an indentation in each cookie by pressing down gently, about halfway in.
- Bake the cookies in the preheated oven until lightly golden, about 13-15 minutes. Remove from the oven and let cool on the baking sheet for 5-10 minutes.
- Once the cookies have cooled slightly, use a small spoon to fill each indentation with H&R Golden Pistachio Dessert Spread.
- If you prefer a firmer texture, place the finished cookies in the fridge for a few minutes before serving.
