Ingredients:
- 1 3/4 cups unbleached all-purpose flour
- 1 1/2 cups Harris & Ruddock Turmeric Almond Milk
- 3/4 cup almond flour
- 1/4 cup vegan butter, melted
- 1/3 cup aquafaba (the liquid in a can of chickpeas)
- 3 tbsp organic cane sugar
- 1 tbsp cornstarch
- 1 tbsp baking powder
- 1/2 tsp sea salt
Instructions:
- In a large mixing bowl, whisk together flours, cornstarch, sea salt, baking powder and cane sugar. Set aside.
- In a medium bowl, combine Turmeric Almond Milk and melted vegan butter. Set aside.
- In a small mixing bowl, vigorously whisk aquafaba.
- Add wet ingredients (excluding aquafaba) to the dry ingredients and whisk until just combined. Then, fold in whipped aquafaba using a mixing spoon until well combined.
- Allow the batter to rest for about five minutes while the waffle iron preheats.
- Pour approximately one cup of batter onto the preheated waffle iron and close. Cook for 3-5 minutes or until waffles turn golden brown and crispy.
- Transfer cooked waffles to a baking sheet and keep warm in a 200°F oven while you cook the remaining waffles. This recipe yields about 3 1/2 large waffles.
